Sun Dried Tomatoes

An easy and tasteful delicacy!

The preparation is simple and easy. You cut as many ripe tomatoes you wish in halves, place them on wooden boards and sprinkle them with sea salt. You leave them out, in the sun,until they are dried. When there is absolutely no hint of humidity left on the tomatoes, you store them in a dry room.

When you wish to cook them, you either chop them and season your sauces and meals, or mash them in the blender and use as tomato paste, or you can soak them in warm water overnight (to let them rise and lose some of the saltyness). The following day, you make a loose dough with flour and water, dip the tomatoes in the dough and deep fry them in olive oil. Season with pepper and bring along a bottle of ouzo!
