

Fourtalia Omelette
Fourtalia is a traditional recipe of the Cycladic Islands.
The ingredients may vary from area to area, but the basic recipe is consisted of eggs (lots of eggs), sausages and potatoes. It's a glorified omelette that can be a main course of its own.
The recipe is dead simple. In a deep frying pan, you pour a lot of olive oil and some pork fat (glyna). Cut deep fry some potatoes cut like french fries. As soon as the are turning golden in colour, you add bits of sausage, and if you wish some bacon, peppers, onion rings or whatever it is you desire. Finally you take 6 eggs (for a portion of fourtalia that serves 2-3 people), and beat them in a deep dish. You pour the egg mixture over the fries and sausage in the pan. Cover pan with a large dish. Wait until the bottom of the omelette is firm, and then turn it over, in order to cook from both sides.
Serve hot, and bon appetite!
