Caper (and how to preserve it for months!)

Caper is a native Greek plant, and it can easily be found on Tinos island.

It has been one of the Ancient Greek's favourite plants.

Caper plant is a remedy for many illnesses, the flowers and the plant's skin -when boiled- is used for skin diseases, and the caper fruit -given to the women who were in labour- helps with the contractions.

The caper leaves are an excellent remedy for insect bites and skin irritations. Caper is picked during the summer months, and is stored in jars with sea salt, or sun-dried.

Preserved Caper

Beside the traditional use of caper in salads (Greek Salad, Carrot and Lettuce Salad), it can be deep fried as patties, with some flour and water. Caper patties are best friends with ouzo and fried tomatoes.
