Artichokes have to be the most beloved of vegetables for all the residents of the island. They are used in numerous recipes, and there is an Artichoke Festival as well!
Artichokes with rice
Ingredients
4-5 artichokes
1 onion
2 cups of small grained rice
1/2 cup olive oil
juice of two lemons
Salt and pepper to taste.
Recipe
Wash and cut the artichokes, dip them in the lemon juice (it prevents their skin from going darker), and cut them in halves, and then again in halves. Chop the onion, saute it in a pan with olive oil, and add the artichoke pieces, salt and pepper and six cups of water. When the artichokes are done, add the rice and let it simmer until the rice is done.
